THAI VEGETARIAN GREEN PAPAYA SALAD


INGREDIENTS

Green Papaya                           - 1/2

Thai Chilies                              -  2 

Cherry Tomatoes                      - 6

Garlic Cloves                            - 4

Roasted Peanuts                       - 1/4 cup

Lime                                          - 1/2

Salt                                            - a pinch

Brown Sugar                            - 1 tsp

Vinegar                                     -  1/4 tsp [ optional ] 


METHOD

Shred green papaya...

Chop cherry tomatoes and Thai chili padi .

Crush garlic cloves...

Add all the ingredient together in a mixing bowl...

Mix it well ....

Thai vegetarian green papaya salad is ready to taste....

Can also add shredded Carrot, Cabbage  and half cooked Green Beans if interested....

MY ICED WATER MELON


 Just scoop up watermelon with the special tiny scoop and freeze for 15 mins..... U can have ur  iced watermelon .... Unfortunately sometimes we end up with sweet less watermelon .... In this way after scooping up to tiny ball just add sugar syrup over it and freeze it ... can be added in fruit salads or just make a lollipop with toothpick in parties and get together....

VEGETARIAN THAI MANGO SALAD

INGREDIENTS:

Firm Unripe Mangoes         - 1

Onion                                   - 1

Bean sprouts                        - 1 cups

Coriander leaves                  - 1/4 cup 

Spring Onions                      - 4 

Thai Basil                            - 1/4 cup

Fried Tofu                           - 1 cup

Red Chili                              - 1



SALAD DRESSING:

Soy Sauce                             - 3 tsp

Lime Juice                           - 3 tsp

Brown Sugar or Honey       - 2 tbsp

Thai chili  sauce                  - 2 tsp

Peanuts or cashews nuts      - handful 

METHOD:


Mix together all the salad dressing ingredients in a cup.

The dressing should be a mixing of sweet,sour,spicy and salty taste. Set aside.

Take the unripe mango the flesh of the mango should be firm 

Using a medium to large-size grater grate the flesh of the mangoes into a mixing bowl. 

Add the bean sprouts,chopped coriander, cut spring onions, cubed tofu, the chopped red chili, mix well to combine.

Add the dressing and mix again. 

Place on a serving platter. Sprinkle the nuts over top and garnish with thai basil.

INGREDIENTS:

Pineapple cut into small pieces         - 300 grms

Garlic smashed                                  - 2 

Onion sliced                                      - 1 big 

Chilli paste                                       - 1 tbsp 

Oil                                                    - 1 tbsp
  
Sugar                                               - to taste

Salt                                                  -  to taste

METHOD:

Take a frying pan and heat  the oil.

Saute  the smashed garlic well.

Add in the sliced onions.Saute till translucent .

Add in the chilli paste.

Cook on slow fire till the raw smell goes.

Add in the pineapple slices, sugar and salt.

Cook for few more minutes. The pineapple will ooze out some juices.

Stir fry for a moment and remove.

Goes well with any Kuska, Biryani, Pulao or Ghee rice.
